Of course a nice glass of wine goes well with a hearty steak, and now researchers who study the way food feels in our mouths think they may understand why that is: The astringent wine and fatty meat are like the yin and yang of the food world, sitting on opposite ends of a sensory spectrum.

The findings, reported in the October 9th issue of Current Biology, a Cell Press publication, offer a whole new definition of the balanced meal. They also offer a new way of thinking about our eating habits, both good and bad.

"The mouth is a magnificently sensitive somatosensory organ, arguably the most sensitive in the body," said Paul Breslin of Rutgers University and the Monell Chemical Senses Center. "The way foods make our mouths feel has a great deal to do with what foods we choose to eat."

It might explain the appeal of salad dressings, with their characteristic acids and oils, for example. Think also of the pink folds of ginger on the sides of our sushi plates or the soda with our burgers and fries.

The researchers knew that astringent wines feel rough and dry in our mouths. Fats, on the other hand, are slippery. There was the notion that the two might oppose each other, but it wasn't quite clear how that might really work. After all, the astringents we consume are only weakly astringent.

Breslin, Catherine Peyrot des Gachons, and colleagues now show that weakly astringent brewsin this case containing grape seed extract, a green tea ingredient, and aluminum sulfatebuild in perceived astringency with repeated sipping. When paired with dried meat, those astringent beverages indeed counter the slippery sensation that goes with fattiness.

This natural tendency for seeking balance in our mouths might have benefits for maintaining a diversity of foods in our diet, Breslin says.

"The opposition between fatty and astringent sensations allows us to eat fatty foods more easily if we also ingest astringents with them," he says.

As an aside, Breslin adds, fresh seeds and nuts could have a certain sort of appeal. "These foods come both with their own fats and astringents in one package, so they may be self-balancing."

Think tank: path to Iran nuke warhead 2-4 months

(AP) ? Iran could produce enough weapons-grade uranium to arm a nuclear bomb within two to four months but would still face serious "engineering challenges" ? and much longer delays ? before it succeeds in making the other components needed for a functioning warhead, a respected U.S. think tank said Monday.

While Iran denies any interest in possessing nuclear arms, the international community fears it may turn its peaceful uranium enrichment program toward weapons making ? a concern that is growing as Tehran expands the number of machines it uses to enrich its stockpile of enriched uranium. As those fears grow, so does concern that Israel could carry out its threats to attack Iran's nuclear facilities before that nation reaches the bomb-making threshold.

In a strident call for an internationally drawn "red line" on what he said is Iran's move toward nuclear arms, Israeli Prime Minister Benjamin Netanyahu said on Sept. 28 that the world has until next summer at the latest to stop Tehran before it can build an atomic bomb. Flashing a diagram of a cartoon-like bomb before the U.N. General Assembly, Netanyahu said Iran is ready to move to the "final stage" of making such a weapon by then.

For now, U.S. military and intelligence officials say they don't believe Iran's leadership has made the decision to build a bomb, while also warning that the country is moving closer to the ability to do so.

The Institute for Science and International Security did not make a judgment on whether Iran plans to turn its enrichment capabilities toward weapons making. But in its report made available to The Associated Press ahead of publication Monday, it drew a clear distinction between Tehran's ability to make the fissile core of a warhead by producing 25 kilograms (55 pounds) of weapons-grade uranium from its lower enriched stockpiles and the warhead itself.

"Despite work it may have done in the past," Iran would need "many additional months to manufacture a nuclear device suitable for underground testing and even longer to make a reliable warhead for a ballistic missile," the report said.

Beside its payload of weapons grade uranium, a nuclear warhead also needs to have a complicated trigger mechanism that sets off a chain reaction in the weapons grade uranium ? the fissile core of such a weapon ? resulting in the high-power blast and widespread radiation characteristic of such weapons. While the International Atomic Energy Agency says Iran may have worked secretly on testing such a nuclear trigger, Iran vehemently denies any nuclear weapons experiments.

Additionally, ISIS ? which often advises Congress and other branches of U.S. government on Iran's nuclear program ? said any attempt to "break out" into weapons-grade uranium enrichment would be quickly detected by the United States and the IAEA, which monitors Tehran's known enrichment sites. With Washington likely to "respond forcefully to any "break-out" attempt, Iran is unlikely to take such a risk "during the next year or so," said the report.

Still, the report suggested a narrowing window as Iran positions itself to increase enrichment.

Iran now has more than 10,000 centrifuges enriching uranium at its main plant at Natanz, 225 kilometers (140 miles) southeast of Tehran, making low-level material. Additionally it has about 800 machines turning out 20 percent enriched uranium at Fordo, a bunkered structure fortified against an air attack near the holy city of Qom, as well as about 2,000 more installed but not yet running.

Uranium enriched to 20 percent can be turned into weapons-grade material much more quickly than low-enriched uranium. If the centrifuges at Fordo, which are now idle, also start operating and are used to make 20 percent material, Iran ? using its total enrichment output of low and higher grade uranium ? could produce enough weapons-grade uranium for a warhead within three or four weeks, said the summary.

Olli Heinonen, who stepped down as the IAEA's deputy director general in charge of the Iran file in 2010, said the Institute for Science and International Security report contains "good and technically sound estimates."

He said Fordo will nearly double its production capacity of 20 percent enriched uranium to up to 30 kilograms (more than 60 pounds) a month, if and when all the machines there are operating.

Saints celebrate, but issues remain

Drew Brees got the NFL?s consecutive games with a touchdown pass record with his 48th in a row, beating his old team the Chargers 31-24 in the process.

They got the goose-egg off their record, improving to 1-4, a half-game out of second in the NFC South.

But this is a temporary reprieve, at best.

The Chargers have shown signs of being a good team, but were swept up in the moment Sunday. (Watch highlights here.)

But until the Saints run the ball with any degree of consistency, or until they play better defense, they won?t get much better.

This Saints defense doesn?t have nearly the talent coordinator Steve Spagnuolo had at his disposal when he built a reputation with the New York Giants. That?s a given.?But they just don?t fit what he wants to run. There?s little evidence they can consistently rush the passer with any of their linemen, and there?s not an impact player in the back seven either (despite Roman Harper running under a gift-wrapped one in the fourth quarter). They have some solid parts, but until they add some personnel, this defense is going to struggle regardless who?s coaching.

Gregg Williams could trick it up and blitz and try to cover up the shortcomings, and it worked for a bit. But it wasn?t going to beat the clock, as Spagnuolo is finding out.

Here are five more things we learned during Sunday Night Football:

1. Maybe not being the champions of March, April and June will help the Chargers come January.

This offseason has been different for San Diego, without the weight of Super Bowl expectations that have been standard as they?ve underperformed for years.

Many thought the Chargers were lost at sea when Vincent Jackson was allowed to leave in free agency. But by replacing him with cheaper players such as Eddie Royal and Robert Meachem, the Chargers may have made themselves harder to defend in the long run.

Even the dog-housing of running back Ryan Mathews has an ulterior motive.?When you put a guy you traded up in the draft to acquire in the first round on the bench, there?s a message of accountability.

And while it might be temporary, the 3-2 Chargers appear more willing to work for the praise that was given so freely before it was earned.

2. Of course, the Chargers need to get some people well, specifically left tackle Jared Gaither.

He battled back problems all summer, and gave up game-deciding pressure late in the game. Whether that flared up or he was just beaten, it was clear in the final moments of the game he wasn?t right, and it cost them a chance to tie.

3. It?s hard to call a guy with a five-year, $36.3 million contract underrated.

But you know what, Saints wide receiver Marques Colston is kind of underrated.

It?s almost amazing that he hasn?t made a Pro Bowl yet, and if not for some injuries he probably would have.

Brees? second touchdown, the non-record breaking one, was Colston?s 50th with the Saints, tying Joe Horn for most in Saints history.

Colston made that record his own in the third quarter, and finished with nine catches for 131 yards and three touchdowns.

4.?Chargers rookie linebacker Melvin Ingram was flagged for roughing the passer in the third quarter, taking a pick six off the board and allowing the Saints to get within a field goal, a 14-point swing that changed the course of the game.

As roughing calls go, it was a little thin, but it?s the kind of thing that gets called these days.

But he?s one of a few good young parts on that Chargers defense (along with defensive end Corey Liuget) that will keep them solid for years to come.

5. Drew Brees broke the record.

But you know what? The Chargers still made the right call going with Philip Rivers. For all the numbers Brees has posted, the Chargers quarterback has more regular season wins since Brees was allowed to leave, and mostly similar passing numbers.

What Rivers hasn?t had is Sean Payton. Norv Turner is a good play-caller, but Payton?s proving in his absence how good he is at his job.

If there was a debate, let?s end it. Young and promising is better than not-as-young and hurt, which is what Brees was when the decision was made.
